My current pan (left in the photos) is an 8-inch Vollrath Tribute from a restaurant supply company. It’s a few years old and was about two to three times the price. The new pan is a 10-inch Faberware Millenium.
BASIC DESIGN
The Faberware Millenium is a deep pan with only a slight slope to the sides. The Vollrath Tribute has more steeply sloped sides.
This means that the Faberware gives you more volume per inch of pan size. However, the nicely curved Vollrath is easier to scrape with a spatula. Great for scrambled eggs and flipping omlettes.
WEIGHT
Despite being a smaller pan, the Vollrath is actually heavier. I think this is because the Tribute model is a 3-ply pan that mimics Calphalon’s top tier pans. That said, the Faberware is NOT a lightweight. This sucker is heavy.
HANDLE
I thought I wouldn’t like the Faberware’s curved handle, but it actually distributes the weight and size of the pan very well. For 10”+ pans, a curved handle is great.
On the other hand, the soft grip plastic on this pan is only rated for ovens up to 350 degrees F. The Vollrath’s all-metal handle is good up to 500 degrees F.
The curved handle is also going to make the Faberware a pain to store.
COATING
The Faberware pan is Tephlon while the Vollrath uses a proprietary nonstick coating called Ceramiguard II. Both are rated for high heat applications (as Tephlon has been redesigned to be safer).
The Tephlon pan is darker; not sure why. Also a note on durability, the coating started flaking off the edges of my Vollrath pan within just a couple months of purchase. It never flaked off further than the edges, but it was still aggravating considering how much I paid. It has stood up phenomenally well for a non-stick coating otherwise. It’s seen mild abuse from metal utensils yet we only started having issues with things sticking to the damaged areas in the last year or so.
BALANCE
The Faberware pan has a wide, weighted bottom. Even though my gas cooktop’s grate doesn’t offer much support, the Faberware pan sits firmly no matter where I place it.
The Vollrath pan’s small, unweighted bottom has always teetered and tipped on the cooktop grate unless I place it perfectly. Even though it’s a smaller pan, it wouldn’t do this if it was designed like the Faberware.
I’ll update my review after I use the pan. These are just details I would have liked to have when I was shopping.

I'm an All-Clad user and have their nonstick skillet, but after a short time stuff sticks, coating or not. With this pan, after two years of pretty constant use, everything still slides out perfectly as though it were brand new. I'm not a gentle cook and have managed to scratch it a little. It doesn't matter; it is still perfectly nonstick. That makes clean up so easy I rarely bother to put it in the dishwasher. A quick swish with a soapy sponge and it's clean.
On the down side, it's almost impossible to keep the outside bottom of the pan shiny because of the ridged pattern so I can't hang it for display, but that's a small price to pay for omelets that slide out easily or grill cheeses that brown beautifully (even the cheese doesn't stick).
I have the 8-inch version too, which I use often for single servings and crepes. If I'm trying for a nice sauté, I usually use a regular non-coated pan, but this does work for that. It just takes a little longer.
Since I often use it on my regular stove, the temperature can get pretty high and I have been known to burn things--but they still slide out and clean up is easy. If this pan ever gives out, I'll buy another. I'm really sold on it for nonstick cooking.
